White Chili

One of my parents friends made us some White Chili and brought it over after dad got home from the hospital. I hadn't ever had it before, but Mom kept talking about how good it was. Boy was she right... it was yummers!! :) I made a meal out of it for several days!!! I haven't made it yet, but it sounds pretty easy!!! Now that is getting cold..brrrrrr...what better than some warm yummy chili!!
Enjoy!!!


What you need:
1/4 cup (1/2 stick) butter
2 large white onions, chopped
1 jalapeno chile, chopped
1/3 cup all-purpose flour
4 cups chicken broth
3 cups half and half
3 (15 oz) cans Great Northern beans, drained and rinsed
2 or 3 (4 oz) cans chopped green chiles
4 cups chopped cooked chicken breasts
2 teaspoons salt
1/2 teaspoon white pepper
1 tablespoon chili powder
1 tablespoon cumin
1 tablespoon hot red pepper sauce
1 1/2 cups (6 oz) shredded Monterey Jack cheese
1 cup sour cream

Melt the butter in a large saucepan over medium heat. Add the onions and jalapeno chile and saute until tender. Add the flour and cook for 5 minutes, stirring frequently. Whisk in the chicken broth and half and half gradually. Simmer for 10 minutes or until thickened, stirring frequently. Stir in the beans, green chiles, chicken, salt, white pepper, chili powder, cumin and hot sauce. Simmer for 20 minutes, stirring occasionally. Stir in the cheese and sour cream. Cook just until the cheese is melted, stirring constantly.

Makes 6 to 8 servings and is DELISH!!! :)

Baked Beans

We had a cookout last night and Josh cooked 2 boston butts. Of course you have to have baked beans with bbq! (along with yummy potato salad and cole slaw for some)
I got the baked bean recipe from my mom a few years ago. I have always cooked it in the oven up until recently. When we first moved in the house, our stove wasn't in yet, and we had some people over for a cookout. I made them in the crockpot and they were just as good!

Here is what you need to make Baked Beans:

1 Large Onion, cut up
1 Med. Green Pepper, cut up
1 1/2 cup brown sugar
1 cup ketchup
2 tsp. dry mustard
1 tsp Worcestershire sauce
about 10 slices of bacon, cut up
2 (31 oz) cans pork and beans
1/4 cup Molasses

Mix all ingredients together and bake uncovered at 325 degrees for 2 hours.
Or it takes about 2-4 hours on low in a crockpot.

I had every intention of taking some pictures as I was making these. Of course I was running behind and had to rush to get everything ready and totally forgot about pictures until everyone was fixing their plates! Oh well!!!

Chicken Enchiladas

My Aunt Terri sent me this recipe. I am definitely going to have to try it out. Makes me hungry just thinking about it! (Why is it that I start craving everything I see someone else eating or talking about!?!?!)

Chicken Enchiladas

What you need:

10 oz. Cream of chicken soup
8 oz. Sour cream
2 cups or more of chicken
½ cup of green onions
2 cups of cheese (I use the four cheese or Mexican mix)
8 flour tortillas (large)
1 nacho cheese soup (op)
Optional:
10 oz. Frozen broccoli (drained)
½ cup red pepper
1 small can of green chilies

How to prepare:
Mix all together including 1 cup of cheese. Then I take a can of the nacho cheese (original receipe says cream of chicken) and spread ½ the can on the bottom of the casserole dish and the other on top of tortillas before adding the remaining cheese. This keeps it from drying out in the oven. Place tortillas seam down. Cover with remaining 1 cup of cheese. Cover with foil and bake for 20 -25 @ 350. Take the foil off and put back in the oven for about 5 minutes until the cheese melts.

Appetizers

I am always searching for recipes for yummy appetizers to make. This one came from none other than my Mother... she is an amazing cook!!
Once again its super easy... you'll find that the majority of my recipes are easy!!! Why have it any other way!?!?!?

Ok, here is the recipe for......... Easy Cheeseball.

What you will need:

2 (8oz) cream cheese
Small package dry ranch dressing
Cheddar Cheese- you choose the amount.
Package of Oscar Meyer Bacon Bits

Whip together cream cheese and ranch dressing mix.
Add some bacon bits and cheddar cheese (as much cheese as you'd like)
Take mixture and roll into balls over the bacon bits.
You can make 2 medium size balls out of this or one large.
Refrigerate for a few hours.
Serve with crackers....yummmy!!

*You can also use 8 oz sour cream instead of the cream cheese to make this a dip instead of a cheeseball*

Ok, so all these food posts are making me sooo hungry. Poor Josh is going to have to stop at the grocery store on his way home now!! I will post more yummy recipes later. Please share your recipes as well!! I look forward to reading what everyone else enjoys making!! :)

Its time for desert!!

This is a recipe of my Moms. I have to say, once again it is sooo easy and super yummy! It is a hit every time I make it!! Aren't we all about making things that are super easy and yummy!?!?!

What you will need to make: Mom's Chocolate Pound Cake

1 box golden butter cake mix
small box chocolate instant pudding mix
4 eggs
1 cup Wesson oil
1/4 cup water
8 oz sour cream
1 cup milk chocolate chips

Now, are you ready for these difficult preparations!?!?

Preheat oven to 350 degrees.
Mix together all ingredients and put in sprayed bundt pan.
Bake for 45 to 50 minutes. (May need to cook longer... each oven is different. I always test with a toothpick to see if the middle is done. It will still be a little gooey, so make sure to not cook it for too long)
Cool before dumping

Chicken and Rice Casserole

One of Josh's favorite meals is Chicken and Rice. I got this recipe from a friend in College. I swear while we were in school, he had me fix this atleast once a week! I haven't made it since we moved in the new house, so we haven't had it in awhile. I got soo sick of it cause we ate it soo often! I would have to double the recipe cause Josh would literally eat it all week! ha! It is soo easy to make. Funny how he likes something sooo easy and the things that take quite awhile to make, he doesn't like as well! lol!
Let me know if you enjoy it as much as Josh does!!

What you need:
4-6 skinless, boneless chicken breasts (can use chicken tenders as well)
1 can cream of chicken soup
1 can cream of mushroom soup
1 can cream of celery soup
1 1/4 cup rice
1 stick butter
Paprika

Preheat oven to 350 degrees. On the stove, mix together 3 soups, one stick butter and almost full soup can of water until the butter is melted. Stir in rice and mix until well blended.
Pour into a prepared (sprayed) 9x13 in. baking dish. Place chicken breasts on top of the rice mixture. Put a slice of butter on each breast and sprinkle with paprika. Cook for an hour to an hour and a half.
ENJOY!!!
(Soo sorry I don't have any pictures... like I said I haven't made this in awhile!! I'm sure if Josh saw this post he'd want it tonight!! ha)
