White Chili

One of my parents friends made us some White Chili and brought it over after dad got home from the hospital. I hadn't ever had it before, but Mom kept talking about how good it was. Boy was she right... it was yummers!! :) I made a meal out of it for several days!!! I haven't made it yet, but it sounds pretty easy!!! Now that is getting cold..brrrrrr...what better than some warm yummy chili!!

What you need:
1/4 cup (1/2 stick) butter
2 large white onions, chopped
1 jalapeno chile, chopped
1/3 cup all-purpose flour
4 cups chicken broth
3 cups half and half
3 (15 oz) cans Great Northern beans, drained and rinsed
2 or 3 (4 oz) cans chopped green chiles
4 cups chopped cooked chicken breasts
2 teaspoons salt
1/2 teaspoon white pepper
1 tablespoon chili powder
1 tablespoon cumin
1 tablespoon hot red pepper sauce
1 1/2 cups (6 oz) shredded Monterey Jack cheese
1 cup sour cream

Melt the butter in a large saucepan over medium heat. Add the onions and jalapeno chile and saute until tender. Add the flour and cook for 5 minutes, stirring frequently. Whisk in the chicken broth and half and half gradually. Simmer for 10 minutes or until thickened, stirring frequently. Stir in the beans, green chiles, chicken, salt, white pepper, chili powder, cumin and hot sauce. Simmer for 20 minutes, stirring occasionally. Stir in the cheese and sour cream. Cook just until the cheese is melted, stirring constantly.

Makes 6 to 8 servings and is DELISH!!! :)
