Donut Muffins

My mom got this recipe from a coworker and kept telling me how good and easy it was. Of course I'm always up for easy, so I finally tried it out Sunday afternoon. It may have been a bad idea......as of this morning, we only had 1 left!!!!
What you need:
1/2 cup sugar
1/4 cup butter, melted
3/4 tsp Ground Nutmeg
1/2 cup milk
1 tsp Baking Powder
1 cup All Purpose Flour

Topping (these ingredients will be used in the 2nd step)
1/4 Cup butter, melted
1/2 cup sugar
1 tsp ground cinnamon

Preheat oven to 375 Degrees and Grease muffin tins. (The recipe calls for the mini muffin tins, but I used the regular sized and they worked great)
Mix Sugar, butter and nutmeg in a bowl. Stir in milk. Mix in baking powder and flour until all combined and spoon in tin until halfway full. Bake until tops are lightly golden brown, approx 15-20 mins.
While the muffins are baking..........
Place melted butter in a bowl and combine the sugar and cinnamon in a separate bowl. Remove the muffins from the tin when finished and dip each muffin in the butter and then roll in the sugar/cinnamon mixture. Place on wax paper to cool and whaala!!! These are really good warm!!!!! It made about 8 regular sized muffins.

*Next time I will use my regular size muffin tin, but not put as much in each tin. Also, i'll prob cut back on the nutmeg some and use 1/2 tsp instead of 3/4 tsp.

YUMMY and EASY Porkchops

I made this for dinner one night last week, since its one of my quick and easy meals. I realized as I was fixing our plates I didn't take any pictures!! Opppsss But it is oohhhh sooo good!!! (and easy!)

What you need:

Pork Chops
1 1/2 cup white rice
2 cans french onion soup
1 can beef broth

Super simple.... Pour the rice in the bottom of a prepared 9x13 dish. Pour soups on top of rice and stir a little. (You may want to add a little water to the mixture) Place Pork chops on top of mixture and season with a lil cavendars. Cook on 350 for an hour to hour and a half.
Seriously, its that easy and is super yummy!!! =)

Easy Chicken Pot Pie

1 can mixed vegetables, drained (you can also use frozen, obviously)
2 chicken breasts, cooked & cubed (in a pinch you can use a can of chicken - still yummy)
1 can cream of chicken soup
1 cup bisquick
1/2 cup milk
1 egg
1/2 tsp. celery flakes or salt
1/4 tsp. poultry seasoning
1/4 tsp. pepper
heat oven to 400. In ungreased 9" (deep dish) pie plate stir together vegetables, chicken & soup. Add spices, stir. In another bowl, stir remaining ingredients until blended. Pour on top of vegetable/chicken mixture. Bake about 30 minutes or until golden brown.

Yum-O Baked Corn

Ingredients Needed:
Can of Corn, Drained
Can of Cream Style Corn
3 oz Sour Cream
1 Cup Melted Butter (see why this is so Yummy?)
2 Eggs, Beaten
1 Box Corn Muffin Mix (I use regular size Jiffy)
Directions:
Preheat oven to 350.
Combine the two corns, sour cream, melted butter, beaten eggs & corn muffin mix.
Mix Well & Pour into 9 x 13 baking pan & bake 35-40 minutes. Yes, its THAT easy!!! =)
